I try to prepare at least two meatless meals a week for my family.  Pasta and healthy salads are always the way to go when trying to fill them up.  I've come up some meatless dishes loaded with fresh veggies, herbs, nuts, beans and soy protein that are sure to satisfy.

Appetizers

Spinach Brownies ~ spinach, onion and the sharpest cheese I could find baked in a brownie pan, hence the name Spinach Brownies

Veggie Empanadas ~ stuffed with broccoli slaw sauteed with scallions, garlic, spices and manchego cheese

Caesar Salad ~ romaine Lettuce, all natural croutons, shaved Parmesan Reggiano and all natural caesar dressing on the side ~ $3.50/pp

Asian Salad ~ shredded romaine, carrots, red pepper, edamame, scallion, toasted almonds, and rice noodles with orange muscat sesame dressing on the side ~ $4.50/pp

Garden Salad ~ romaine lettuce, grape tomatos, english cucumbers and red onion with assorted all natural dressing on the side ~ $4.00/pp

Signature Mediterranean Rice Salad ~ basmati rice, english cucumber, grape tomatos fresh herbs, feta cheese, cured olives and chick peas tossed in house vinegarette ~ $4.50/pp
